Fall into Fitness

Maybe you’ve already seen some of the signs. You felt a chill in the air, or saw a leaf or two on the ground. You scheduled a trip to go apple picking or to visit the pumpkin patch.  The shift of the seasons is definitely upon us.  As much as it’s hard to say good-bye to endless summer days, swimming, and cook-outs, as the season turns, I can’t help but feel rejuvenated. Fall truly brings out a feeling of change. You can feel it in the air, you see it in the trees, and there-in lies a new opportunity.

Bring on football season, sweater weather, all the beautiful fall colors, and let’s fall back into fitness.

Take the opportunity to make a change.  Rearrange something in your schedule and fit in time for exercise. Plan it into your week, put it on your calendar, make it fit.

Peanutty Peanut Butter Squares

Serves: 16 (1 square per serving)

Ingredients:
1 1/2 cups all-natural smooth peanut butter
1/2 cup raw honey (or pure maple syrup)
2 tsp. pure vanilla extract
2 large eggs
1/2 tsp. baking soda, gluten free

Directions:
Preheat oven to 350. Lightly coat 8X8 inch baking pan with nonstick cooking spray. Combine all ingredients in a large bowl and mix well. Evenly spread batter into prepared pan. Smooth the top with a spatula. Bake for 20 minutes. Squares may be a little soft when coming out of the oven, but they will continue to cook. Cool, cut into squares.
